This almond and tomato-based sauce hails from Spain and was originally made to be eaten with fish. But its smoky, garlicky, and slightly spicy flavor tastes great on just about everything. Try it as a sandwich spread, a vegetable dip, a marinade, or even use it as a pasta sauce alternative. The Garlic Almonds add a nutty richness and give the sauce a hearty texture.
Ingredients
- 16 ounce jar of roasted red peppers, drained
- 1 cup Santé Garlic Almonds
- 12 ounce can fire roasted roasted tomatoes
- 2 garlic cloves
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp cayenne
- 1/2 cup olive oil
Instructions
- Add all ingredients except the olive oil to a food processor. Blend the ingredients until well combined.
- While the food processor is still blending, slowly drizzle in the olive oil until the mixture is smooth and emulsified.
- Adjust the seasonings to taste.
- Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
