This delicious and easy chopped salad is topped with the crunch of spiced pecans and will be a summer go-to for BBQ's and picnics. This easy and versatile recipe can be made in unlimited ways with whatever veggies you have available. The non-negotiable ingredient is the Sweet & Spicy Pecans that add a touch of heat, a nutty crunch, and a serving of plant-based protein.
Ingredients
- 2 cups orzo, cooked and drained
- 2 tbs unsalted butter or olive oil
- 2 ½ tsp salt, divided
- 1 ½ cups cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup feta, crumbled
- ½ large avocado, diced
- ¼ cup red onion, diced
- 4 cups mixed greens
- 3 tbs olive oil
- Juice of ½ large orange
- Juice of ½ lemon
- 2 tsp garlic powder
- 1 tsp cracked black pepper
- ½ cup Santé Sweet & Spicy Pecans
Instructions
- Cook the orzo according to the instructions on the package. Drain and add to a large bowl.
- Add unsalted butter or olive oil to the warm pasta, season with 1 teaspoon salt and any other spices you wish. Allow to cool slightly.
- In a small bowl or liquid measuring cup, add the olive oil, orange juice, lemon juice, garlic powder, 1 ½ teaspoons of salt, and cracked black pepper. Whisk to combine and set aside.
- Add the remaining ingredients to the pasta. Pour the dressing over the top and mix well to combine. Adjust seasoning to taste and enjoy!
