No-Bake Date Nut Bars

Santé Nuts - Recipe - No-Bake Gluten-free High Protein Date Nut Bars

These easy no-bake date nut bars are high in fiber, protein, and flavor. They're made with only a handful of ingredients and come together quickly with a food processor. Store them in the fridge for a healthy, vegan, and gluten-free snack.

  1. Soak dates in warm water for 5 minutes to soften. Drain.
  2. In a food processor, add softened dates, nut butter, cocoa powder, and flaxseed meal. Process until the mixture comes together in clumps. The mixture should be slightly tacky and easily stick together when pressed between your fingers.
  3. Add pecans and walnuts to the food processor. Pulse a few times until nuts are roughly chopped and incorporated. 
  4. In a loaf pan lined with parchment paper, firmly press the mixture until densely packed. Refrigerate or freeze for at least 1 hour. 
  5. Once chilled and firm, slice into bars. Store them in an airtight container in the fridge.
